Spicy Ground Turkey Over Sweet Potatoes

This idea was sparked because I’ve been too lazy to wait to cook a whole sweet potato in the oven and I’ve been too lazy to cut the entire potato into fries. My mom and I went to Whole Foods yesterday to do some food shopping. I wanted everything, but surprisingly my Whole 30 cravings have been kept at bay and I kind of just needed to look at the ingredients, growl, and put things down. My mom even made my brother gluten free blueberry muffins with brown rice flour, grass fed butter, and agave nectar. I sniffed them, but I put them down. They did smell good and look good. I’m down like 3 pounds from the start of the week. I clearly just needed to lose some bloat. I’m still hoping to lean out, but that will come in time. I feel good and motivated. I’m making bacon for breakfast this morning as a treat (still Whole 30). The only thing that disappointed me about Whole Foods is that they didn’t have a super lean turkey. I usually get 99% so we had to run to a different store to grab it. But I also got a new natural deodorant because I left my old on in the car on a hot day. I need a natural one that doesn’t smell weird so my clients don’t think I’m gross when my armpits are all up in their face. Yum.

I got my leg taped yesterday morning at physical therapy. The kinesio tape is pretty cool and I’m going to run on it today. I didn’t want to leave the house after work yesterday because of the hurricane going on outside, so I stayed in and caught up on book two of Game of Thrones. I ended up passing out at like 11 last night. It felt good. One piece of the kinesio tape is keeping my IT band stretched and the other is moving my kneecap back to the center so that it doesn’t rub on my IT band when I run. That piece feels weird.

Here’s a recipe I came up with yesterday before work. I was in the mood for spicy.

Spicy Ground Turkey Over Sweet Potatoes
Makes 3-4 servings depending on how hungry you are
Ingredients
For Turkey:
1lb 99% Lean Ground Turkey
1 cup cherry tomatoes, cut in half
1 japaleno, diced (leave the seeds if you dare)
1 cucumber, diced
1 tbsp olive oil
cayenne, pepper, salt

For Sweet Potato:
3-4 Sweet Potatoes, cut into rounds
1 tbsp olive oil
1 tsp cayenne
1 tsp cinnamon
salt and pepper

Prep
Preheat oven to 450. Heat a little bit of the olive oil in a large frying pan on medium heat. Once heated, add the raw turkey and let cook. While the turkey was cooking, I coated a pan with olive oil and added the sweet potato rounds. I let them sit in the oil and then flipped them to coat both sides. I sprinkled the cayenne, cinnamon, and salt & pepper on both sides of the rounds and threw them in the oven for about 20 minutes, flipping them after 10. Back to the turkey, once the water in the pan starts to evaporate, add the rest of the oil and spices and stir, breaking up the large chunks as you go. After the turkey starts to brown, add the tomatoes and jalapenos and let cook for about 5-8 more minutes so everything browns nicely. I threw the cucumbers in at the end so they didn’t cook. I don’t like them cooked, but I don’t mind them warm. When the sweet potatoes were done, I lined them on a plate so I could throw the turkey on top. I added the cucumbers to the turkey right before I plated it. You can throw some salsa on top, I ate it with dijon mustard because I’m obsessed with it right now.
